Semuliki Forest Cacao is a grower-centred fermentery that works with over one thousand small-scale organic cocoa farmers. Located in Bundibugyo, a district of western Uganda, it is neighbour to the Rwenzori Mountains, a diverse ecosystem that is legendary for holding the source of the Nile River.Our preparation highlights the warm notes of these Cocoa of Excellence award-winning beans. We find this chocolate particularly suitable for aging (ideally store below 22°C). When fresh, it has a lively over-ripen white peach character. As it ages, warm notes of orange peel and cinnamon become more prominent.
