Our take on this Southeast Asian staple has a complex flavor that's all at once spicy, earthy, and umami, balanced out by the subtle sweet tanginess of dates and tamarind. Great with stir-fried vegetables, grilled fish, and satay, as a marinade for seafood and meats, or for mixing with coconut milk for an easy curry.
